Pressure Cook Chicken & Potatoes

Pressure cooking takes the work out of cooking. Once all the ingredients are added and the pressure has been set; all that is left is time. Although just about anything can be cooked in a pressure cooker; a main dish of chicken and potatoes is one of the fastest and easiest recipes to prepare. As long as you pay attention to pressure settings, cooking times and liquid amounts; a delicious and easy meal will be yours in a short time with minimal effort.

Instructions

1. Add cooking oil to a skillet and heat to medium heat.

2. Add chicken breasts. Saute on each side of chicken breast for four to five minutes to seal in juices. Remove from skillet. Set chicken aside to cool.

3. Wash, but do not peel, four to five small to medium potatoes. Poke several holes in the potatoes with a fork to avoid split potatoes in the pressure cooker later. Set aside.

4. Add chicken stock and spices to pressure cooker.

5. Add chicken and potatoes.

6. Make sure lid is securely sealed.

7. Set pressure on high and cook for 10 to 12 minutes. Some pressure cookers have automatic-release settings. Check owner's manual to determine which one would correspond to 10 to 12 minutes of cooking on high pressure.
