Make Hush Puppies

As legend has it, hunters used to fry corn meal during cookouts and throw it to their puppies to make them hush, giving them the name we know now. Whether or not this legend is true, hush puppies are quick and easy to make and can be thoroughly enjoyed by humans as well as dogs.

Instructions

1. Heat up about 3 inches of oil in a deep fat fryer. The oil must be deep enough to allow the hush puppies to float. Start heating the oil so when you're done making the hush puppy dough, you can drop the hush puppies right into the fryer. The oil should reach 375 degrees Fahrenheit.

2. Mix together 1 cup of cornmeal, a 1/2 cup of flour, 1 tsp. of sugar, 1 tsp. of baking powder and a 1/2 tsp. of salt.

3. Add one egg and 1 cup of buttermilk to the mixture. Blend until the mixture is thick enough to hold together like dough. If the mixture seems runny, throw in a little more flour.

4. Spice the hush puppies if you desire. Hush puppies are neutral tasting and respond well to many different seasonings. Some common additions include onions, green onions, cayenne pepper and black pepper.

5. Scoop out dough with a teaspoon to make the hush puppies. It is not necessary to form them into round balls.

6. Drop the dough into the oil and fry the hush puppies until they are golden brown. This takes about 1 minute. After you make the hush puppies, place them on a paper towel to drain off the oil.
