Microwave Meatloaf In A Pie Plate

Meatloaf is also good as sandwich meat.

One of people's favorite comfort foods is meatloaf, a mixture of ground meat, eggs, bread crumbs or oatmeal, chopped onions and tomato sauce or ketchup. Typically baked in an oven, the meatloaf can be quickly cooked in a microwave much faster than in the oven. The microwave does not heat the kitchen as an oven might, which makes microwaving an option with the weather is hot. The meatloaf browns just as it does in a regular oven after it's cooked in the microwave. Add this to my Recipe Box.

Instructions

1. Beat the egg in the bowl with a fork before adding the rest of the ingredients.

2. Add the remaining ingredients and mix them thoroughly.

3. Place the meatloaf mixture in the glass pie plate and shape into a loaf. Some recipes suggest that you pour ketchup on top of the meatloaf to add flavor. If yours does, place the ketchup over the meat. Cover the pie plate with waxed paper or parchment. Do not use plastic wrap, since it may melt and the chemicals in the plastic wrap can leach into the meatloaf.

4. Put in the microwave for 15 to 17 minutes and check the temperature of the meatloaf by placing an instant read thermometer into the center of the meatloaf. It should read 160 degrees or higher. Microwave cooking power varies from oven to oven, so your microwave may cook faster or slower. Let the meatloaf rest until you are ready to serve. As the loaf cools, the juices settle back into the meat, creating a more tender and juicy meatloaf.
