Make 20 Minute Chicken Bacon And Asparagus

20 Minute Chicken, Bacon and Asparagus








If your family likes asparagus when it's in season, this is an easy dish to prepare that will let the flavors of the vegetable stand out. The bacon adds flavor and enough oil for cooking, so olive oil or butter is not necessary for sauteeing. Serve this recipe with brown rice or angel hair pasta for a light and healthy meal.


Instructions








1. In large heavy skillet over medium high heat, saute chicken and bacon for 10 to 12 minutes, or until chicken is nicely browned.


2. Pour broth into skillet and continue cooking 3 to 5 minutes or until chicken is no longer pink in the middle. Add green onions. Season with salt and pepper, if desired. Cover and turn heat to low.


3. Place asparagus, squash and 2 tbsp. water into a microwave-safe cooking dish, cover with plastic wrap and poke a few holes to let steam escape. Cook on high about 4 or 5 minutes depending on the power of your microwave; stirring halfway through.


4. Remove vegetables from microwave and place on serving plate.


5. Arrange chicken, bacon and green onions on top of vegetables and carefully pour sauce over all.
