Make Vegan Chicken Soup

This chicken-friendly recipe is lower in cholesterol than traditional chicken soup.








Whether fact or fiction, truth or urban legend, the idea that chicken soup can cure the common cold is widespread. This poultry pastiche has been enjoyed by countless "victims" of the sneezes and sniffles. Up until now, those following a vegan lifestyle have had to eschew chicken soup. But they need not abstain any longer. Chick'n soup is easy to make and is quite possibly a vegan cure for the common cold.


Instructions








1. Place the pot on the stove and turn the heat to medium-high. Add the olive oil and allow to heat.


2. Slice the onion into strips.


3. Add the onion strips and minced garlic to the pot and cook until the onions are softened and the garlic is lightly browned.


4. Add the water to the pot.


5. Add the bouillon cubes and turn the heat to medium-low. Stir until the bouillon cubes have completely dissolved.


6. Slice the carrots and celery and add them to the pot.


7. Add the spices, frozen peas and beans and chicken strips to the pot. Allow the soup to simmer for about one hour.


8. Add the pasta for the last 10 minutes of cooking.
