Can You Make a Quiche Without a Crust?


A quiche (pronounced keesh) is a simple dish in essence, yet making one from scratch can seem intimidating. Quiche is essentially an egg pie. A pie crust is filled with beaten eggs, milk and a variety of other ingredients and baked until the eggs are set and the crust is browned. Homemade pie dough is daunting for many home cooks, hence the growing popularity of making quiche without the crust.


Crustless Quiche


By definition a quiche has a crust. But, as with most cooking, your preference is allowed to overrule tradition. The only thing to keep in mind when making a quiche without a crust is that it must have some fat in it, or the pan must be greased, in order for you to be able to remove and serve it smoothly.


Modifying a Quiche Recipe


To make a crustless quiche, mix up your favorite quiche recipe. Follow the recipe exactly, skipping only the part that calls for the crust. Use the same size of pan that is called for in the recipe, and grease it or spray it with nonstick cooking spray. Pour the filling into the prepared pan and bake as the recipe directs, removing it from the oven a few minutes before it is entirely set.


Faux-Crust Quiches


If you like the substance of a crust but don't want the hassle of making it, a variation on the crustless quiche includes ingredients in the egg and cream mixture that creates a kind of crust as it bakes. This can be flour, biscuit mix or cornmeal. As the flour or similar ingredient bakes, it settles out of the egg mixture and forms a faux crust on the bottom of the pan. It will not be the same as, or even similar to, a traditional pie crust, but it does add some body to the quiche.

Crustless quiches are becoming popular: impressive to present, yet simple to make. Leaving out the crust trims some of the fat and calories, making it a good choice for a healthy brunch dish. Many cooking websites now offer recipes developed specifically for crustless quiches.
