Homemade Pizza Stone Cookie Sheets

Perfect crispy crust pizza can be achieved in a home oven.


Crispy pizza crust is a kitchen challenge for home cooks. Most home ovens do not get as hot as restaurant ovens, and that high heat is necessary for the crispy, but not burned, crust. But if perfect pizza at home is your goal, a quick trip to a home improvement store will increase your pizza savvy. After perfecting the crust, you can concentrate on the perfect ratio of pepperoni-to-cheese-to-sauce.


Instructions


1. Remove a rack from your cold oven. Measure the oven rack with a measuring tape and return the rack to the oven.


2. Choose an unglazed quarry tile that fits inside your oven. These tiles are available at home improvement or tile stores. Make sure it is at least 1 1/2 inches thick and is about 1 inch smaller than your oven rack in all dimensions.








3. Wash the tile thoroughly with hot water. Avoid soap as the tile is absorbent and can pass fragrances or tastes onto the food.


4. Air dry the tile for several hours. Make sure that the tile is completely dry before using.


5. Remove all but one rack from your oven, and put it in the bottom-most position. Put the tile on top of the rack.


6. Close the oven door and heat it to 500 degrees Fahrenheit. For best results, heat for an hour or more.


7. Create your pizza on a paddle, peel or rimless cookie sheet. This allows you to slide the pizza onto the stone easily.


8. Open the oven door and quickly slide the pizza onto the stone. Close the door and bake until done according to your recipe's instructions.


9. Remove the pizza with the paddle or cookie sheet and cool slightly before slicing.
