Make A Crustless Quiche







Crustless Quiche


Quiche is an egg dish traditionally baked in a pie crust. However, you can bake the custard in a pie plate or casserole without using a crust to make a crustless quiche that is lower in fat and carbs than the traditional recipe. Quiche makes a good breakfast or brunch dish or can be served with a salad for a light dinner.


Instructions


1. Preheat oven to 350 degrees.


2. Sauté' 1/2 cup of cut red onion and two cups of cut asparagus or broccoli in butter in skillet over medium heat.


3. Add 1/4 cup of chopped parsley and 2 teaspoons of dried basil and stir to combine. Turn off burner.


4. Beat four medium eggs in a bowl with 1/2 cup of whole milk, 1/4 cup of whole wheat flour, 1 tablespoon of Dijon mustard, and salt and pepper to taste. Mix well.


5. Add sauteed red onions and asparagus or broccoli to egg mixture. Stir.


6. Pour into small to medium-sized, greased casserole dish. Top with 1/3 cup cheddar cheese. Bake for 16 to 18 minutes, until set. Remove from oven. Cut into wedges and serve.
