Thicken Up V8 For Pizza Sauce

Opt for V8 vegetable juice for a more flavorful pizza sauce base.

Instead of tomato sauce, V8 vegetable juice can be used as the base for a pizza sauce. Though thin when initially poured through the cooking process, the juice becomes thick enough for use as a pizza sauce. Unlike tomato juice, the many vegetables used in V8 juice add to its flavor. Parmesan cheese is an option, but it will both thicken the sauce slightly and add a cheesy flavor to the finished pizza. Starting with 3 cups of juice, after thickening and reduction, you will have 1 cup of pizza sauce.

Instructions

1. Bring 3 cups of V8 to a boil over medium-high heat.

2. Boil the juice for 8 to 10 minutes or until it has reduced to one-third its initial volume.

3. Reduce the heat to medium, and whisk the Italian herb seasoning mix and tomato puree into the V8 juice.

4. Whisk together in a separate bowl the cornstarch and water.

5. Stir this into the simmering juice mixture and wait for the mixture to return to a boil.

6. Cook the sauce for an additional 2 to 5 minutes or until thickened. Stir the Parmesan cheese into the sauce just before adding it to the pizza crust, if desired.
