Make Menemen Turkish Style Scrambled Eggs







Sweet bell peppers add a disinct taste to this favorite Turkish dish.


Menemen is a Turkish egg dish that is served for breakfast, lunch and sometimes even dinner. The high fresh vegetable content of menemen makes it a very healthy low-calorie, high-fiber dish. It is also suitable for ovo-lacto vegetarians, diets such as South Beach, Montignac and Weight Watchers and the Atkins diet that recommend the consumption of eggs and low carb vegetables.

1. Beat eight eggs in a bowl with a whisk.


2. Add salt and pepper to taste.


3. Cut sic green peppers into small chunks.


4. Peel and chop six tomatoes into small chunks.








5. Finely slice two white onions.


6. Put a large pan over low heat.


7. Heart healthy olive oil is often used in Mediterrenean and Turkish cooking.


Put half a cup of olive oil in the pan.


8. Lightly fry the onions and peppers in the oil without browning for two minutes.


9. Tomatoes provide juice and add flavor and nutritients to this dish.


Add the tomatoes and cook for eight minutes, until the juice has been reduced by half.


10. Pour the eggs onto the pan.


11. Eggs make dishes fit for every meal.


Stir the mixture continually until it begins to firm.


12. Add salt and pepper.
