Preserve a Cheese Wheel


If you need a way to preserve a cheese wheel, then try applying cheese wax to keep the cheese fresh. Applying wax to cheese helps keep mold from forming and the cheese from dehydrating by blocking the air. When sealing a cheese wheel with wax, you must make sure that no air can encounter the cheese. Once you dip the cheese in the wax, you can store the cheese appropriately to age its taste.


Instructions


1. Refrigerate the cheese wheel for three to four hours. Keeping the cheese wheel cold helps the wax to adhere better.


2. Fill the lower portion of the double boiler with water. Place 2 lb. of cheese wax in the top part. Place the double boiler over medium-high heat.


3. Melt the wax to a temperature of 240 degrees Fahrenheit. Remove the melted wax from the stove top.


4. Paint a thin layer of cheese wax over one side of the cheese wheel. Dry completely. Reheat the cheese wax to 240 degrees again if it cools down.


5. Coat the other side of the cheese wheel with the wax. Allow this side to dry completely.


6. Check the entire surface of the cheese wheel and apply another coating of melted cheese wax to cover any holes or cracks.
