Make Homemade Strawberry Cake Icing

Make Homemade Strawberry Cake Icing

Try this easy method for making homemade strawberry cake icing. Using fresh strawberries, cream cheese, coconut and chopped pecans, this recipe makes a decadent addition to any cake or cupcake. Use food coloring to add color, or let the strawberries naturally color the icing. This recipe makes enough icing to frost one large cake or twelve cupcakes.

Instructions

1. Cut the tops off of ¾ cup of fresh, ripe strawberries. Mash the berries well with a fork or potato masher to create about ½ cup and drain well.

2. Combine one 8 oz. package of cream cheese and one stick (8 tbsp.) of butter in a medium mixing bowl. Cream the ingredients together using an electric mixer on low speed for about 30 seconds.

3. Stop the mixer. Add 3 ½ cups confectioners' sugar and mashed strawberries. Blend it on low until the sugar has been thoroughly incorporated.

4. Raise the mixer speed to medium. Beat the mixture for an additional 1 to 2 minutes, or until the strawberry cake icing is light, fluffy and well-combined. Add 2 drops red food coloring, if desired, and mix thoroughly.

5. Add ½ cup thawed, grated coconut and ½ cup chopped pecans. Fold in the ingredients using a rubber spatula until the icing is thoroughly incorporated.

6. Refrigerate the icing for at least 20 minutes to allow it to set.
