Make a BBQ Chicken Sandwich


The BBQ chicken sandwich is a summertime favorite for many families, but you don't need a grill to enjoy it. This recipe lets you prepare a tasty BBQ chicken sandwich at the stovetop, all year round. Yields six sandwiches.


Instructions


1. Preheat the oven to 350 degrees F.


2. Apply an even layer of salt and pepper over each of the chicken breasts.


3. Heat the olive oil in a large skillet over high heat.


4. Sear each chicken breast in the olive oil for 3 minutes on each side, or until golden brown.


5. Pour the barbecue sauce into a small saucepan and bring to a simmer over medium-low heat. Pour the warm sauce into a large bowl.








6. Remove the chicken breasts from the oven. Preheat the broiler, and cover the chicken breasts with the warm barbecue sauce. Turn them over several times to ensure they are thoroughly coated.


7. Place the hamburger buns in the broiler, flat side down. Cook the buns for 1 to 2 minutes, or until they begin to turn brown around the edges, then flip and cook 1 to 2 more minutes. Remove them from the oven, and place two leaves of lettuce onto the bottom half of each bun.








8. Place the BBQ chicken on top of the lettuce on each bun, then place one slice of cheese, one slice of tomato and three pickles on top of the chicken. Place a top bun on each of the sandwiches and serve immediately.
