Make Vegetarian Burritos







Those that choose to go meat free do not have to subject themselves to a life of eating salads. There are some wonderful tasting vegetarian recipes out there that will please both meat and non meat eaters. Many are surprised to hear that Mexican food is quite adaptable to vegetarian cooking. With the right combination of ingredients and spices you can have a wonderful Mexican dish that is 100 percent meat free. In this article we will demonstrate make great tasting, vegetarian burritos.


Instructions


1. Mix the salsa, avocado and sour cream in a big bowl. Refrigerate for about ½ hour to 45 minutes.


2. Refrigerate the mixture for about 45 minutes.


3. Add your olive oil to a non-stick pan. Sauté the pepper and the Zucchinis together. This should take about 7 minutes. If you loose track of time, wait until there is a light brown look and the peppers go soft.


4. Take out you tortilla shells and open your refried beans. Place an even amount down the middle of each one. When the vegetable mix has finished cooking, place these on top. Finally, place the Salsa, sour cream and avocado mixture as the final layer.








5. Fold down the corners and roll into a burrito. This makes a very tasty, meatless burrito that is perfect for lunches or dinners. It can also be used for those that are dieting if the take the low fat options.
