Cook Savory Pork Chops With Pineapple Relish

Pork chops are a popular main course. Fruit like apples are commonly matched with pork. For a unique spin on pork chops, prepare them with red onion, fresh chopped pineapple and fresh lime juice. Peanut butter and jalapeno pepper give this easy-to-prepare dish robust flavor as well as a hint of heat.








Instructions


1. Soak the onion in a bowl of cold water for about 10 minutes. Puree 3/4 cup of pineapple with the lime juice, peanut butter, fish sauce and jalapeno until the mixture is smooth.


2. Toss the cucumber and the remaining pineapple in a bowl. Add the pureed pineapple and toss it to coat the cucumber. Season the mixture with salt and pepper.


3. Pat the pork chops dry and season them with salt and pepper. Heat a large skillet over medium-high heat and add 1 tbsp. of olive oil.


4. Lay three pork chops in the pan and sear them until they are golden on the first side, which takes about three minutes. Flip the chops over and finish cooking them on the second side for two to three minutes.


5. Transfer the cooked pork chops to a plate and loosely cover them with aluminum foil. Cook the remaining chops in the same manner as described in step 4. Add oil if needed for the chops.


6. Drain the onion and add to the pineapple. Serve with the pork chops.
