Make Your Own Hot Sauce

Homemade hot sauce is fairly easy to make.


Hot sauce is made with chili peppers as a base ingredient. Tomatoes are usually another key ingredient in a hot sauce recipe as they pair well with chili peppers. Making your own hot sauce is a fairly simple process and involves canning the hot sauce in a boiling water canner. You should always wear gloves when making hot sauce as the peppers can irritate your skin. Be sure to label the jars clearly to avoid eating a hot sauce that may be too hot for you.


Instructions


1. Peel the chili peppers and rinse them under cold water. Use the knife to cut a slit in each side. You can make peeling the chili peppers easier by broiling them for 6 to 8 minutes until the skins blister.


2. Wash the tomatoes and place them in a large pot of boiling water for 1 minute so the skins split.


3. Dunk the tomatoes in cold water and remove the skins. Cut out the cores of the tomatoes.


4. Chop the tomatoes, peppers and onions coarsely.


5. Add the chopped tomatoes, onions, peppers, vinegar, salt and pepper to the saucepan and bring to a boil on medium-high heat.








6. Reduce the heat to medium-low once the mixture reaches a boil. Simmer for 10 minutes.


7. Pour the mixture into sterilized canning jars and leave 1 inch of space at the top. You can sterilize canning jars by running them through a dishwasher or a boiling water bath.


8. Seal the lids on the jars and process in a boiling water canner. To process the jars, place them in a canner and fill it halfway with warm water. Bring the water to a boil. Once it is boiling, start timing the jars. Once the time is up, turn the heat off and let the water cool before taking the jars out of the canner. If you live at an altitude of up to 1000 feet, process the hot sauce for 15 minutes. Altitudes of 1,001 to 6,000 feet, process for 20 minutes and over 6,000 feet for 25 minutes.


9. Remove the jars from the canner and let cool for 24 hours. Store in a cool, dry place for up to 2 years.
