Make Rosemary Chicken Salad

This is a nice twist on an old favorite. This is a light recipe that will not break your diet or test your willpower. This chicken salad is best enjoyed as a sandwich on whole-grain bread, but feel free to use your own favorite bread or to eat it on a bed of lettuce. Add this to my Recipe Box.








Instructions


1. Mix together the chicken, green onions, smoked almonds, yogurt, mayonnaise, fresh rosemary, Dijon mustard, salt and pepper until they are well blended.


2. Take 10 slices of bread out of the bag and spread them out on the counter or table in two rows of 5.


3. Using a spoon spread the chicken salad over one piece of bread.


4. Place the a piece of bread from the second row of 5 over the piece of bread that is covered with chicken salad.


5. Repeat this process with the remaining bread and chicken salad.


6. Cut the sandwiches crosswise so that they are diagonal in shape.
