Make Healthy Corn Fritters







Incorporate healthy ingredients for corn fritters.


Healthy and corn fritters generally don't go in the same sentence, but this little recipe has a great taste and wholesome ingredients. Kids are generally willing to eat corn, even if they don't like other vegetables. Corn contains vitamin c and a good amount of fiber. You can keep these corn fritters in the refrigerator for up to three days. Bake in foil to reheat, or stick them in the microwave.


Instructions


1. Add flour, baking powder, soymilk and eggs to a large bowl, and then beat with a mixer until the batter is smooth. Stir in the corn kernels, green onion and parsley.


2. Heat the olive oil in a skillet. Scoop about 1 tablespoon of batter per fritter into the pan, making about 5 fritters at a time. Reduce the heat a little and cook a couple of minutes on each side until they are a nice golden brown.


3. Keep the cooked fritters warm while you cook the rest. Serve them warm. Try the fritters with pinto beans, fried potatoes and a slice of fresh onion.
