Grill Mango Shrimp Skewers







Shrimp on the grill is a summer time classic, but with the addition of mango and lime, your shrimp will have a modern tropical twist. The sweetness of the mango and the zest from the lime compliment these grilled shrimp skewers. The best shrimp to purchase for this recipe are the larger frozen shrimp so they don't dry out on the grill. If you only have the smaller shrimp, make sure you don't over cook them.


Instructions


Preparation for Mango Lime Shrimp Skewers


1. Preheat an outdoor gas or charcoal grill to medium-high heat. If you are using bamboo skewers, soak in warm water for at least one hour to prevent burning on the grill.


2. Mix mango preserves, lime zest, lime juice, chipotle powder, cilantro, salt and pepper in a medium bowl then set aside. Reserve 1/4 cup of this mixture in a smaller bowl to toss the shrimp in after they are cooked.








3. Skewer about six shrimp per person on each skewer. Once they are skewered, place on a plate and brush both sides with the glaze. Place shrimp onto the hot grill and cook for about one to two minutes on each side. You will know when to flip the shrimp when they start to slightly curl and turn light pink.


4. Remove shrimp from the grill and place on a clean plate. Brush with the reserved mango and lime glaze and serve immediately.
