Make Apricot Cookies

Apricots








Apricot cookies are an excellent dessert to bring to a Sunday picnic in the summertime. You can also make extra and place them in a tin as a gift. Your children can help you make them so that they too will be able to pass the apricot cookie recipe on to their kids.


Instructions


1. Set one 8 oz. package of cream cheese on your counter to soften up. If you are in a hurry, you can soften the cheese in the microwave.


2. Put 1 cup of soft butter, 2 cups of flour and the cream cheese you softened earlier in a bowl. Mix until combined.


3. Place the bowl in the refrigerator for about 30 minutes.








4. Preheat your oven to 350 degrees F.


5. Roll your cookie dough out and cut in to circles. You can use the rim of a glass as a cookie cutter if you don't have one.


6. Make your apricot filling by blending 2 cups of apricot chunks, 1 cup of sugar and 1/4 cup of water.


7. Put your apricot filling in the middle of each cookie with a spoon.


8. Fold the cookie over and pinch closed.


9. Spray your cookie sheets with non-stick cooking spray.


10. Place the apricot cookies on a cookie sheet. Bake for 25 minutes.


11. Sprinkle some sugar on top of the cookies and serve.
