Make Pork Bib Ilonggo Style

This is essentially Barbecued Pork Belly or "Inihaw na Liempo” to Filipinos. It’s very delicious and popular, although these days, it’s enjoyed in moderation because it’s not exactly a healthy main dish.Ilonggo style refers to the province of Iloilo which is on the island of Panay in the Western Visayas. As a point of reference, since most people know where Manila is, Iloilo is South West of Luzon (province where Manila is located). There was a lot of development in Iloilo during the Spanish Colonial Era and tourists are drawn to the beautiful architecture (primarily churches) from this period. But Iloilo is less of a tourist spot than the largest Visayan city and province, Cebu.


Instructions


Make Pork Bib Ilongo Style


1. Combine garlic, vinegar, peppercorns, soy and soda. Marinate pork, cover container tightly and keep in the fridge for 24 hours.


2. After marinating pork, and you’re ready to cook, take a skillet and braise pork in marinade for 15 minutes; skin side down.


3. Take the pork out of the marinade, shaking each piece as you remove with tongs. Let sit on a dish for 15 to 20 minutes.


4. Barbecue over medium coals or place in a 375-degree oven in a baking pan and roast until skin is crackling.








5. Serve with steamed rice.


6. Many Filipinos serve this with a side of dipping sauce made with vinegar and garlic. Some add hot peppers.
