Make Chargrilled Oysters


Chargrilled oyster is a dish that originated in southern Louisiana during the days of the Great Depression. Most families that harvested the oysters would eat a variation of this dish daily, and some would eat oysters for every meal. This recipe prepares 24 chargrilled oysters and will feed four to six people.


Instructions


1. Chop fresh parsley until you've accumulated ½ tsp. Grate 4 tsp. of the Asiago cheese, and allow the butter to warm to room temperature.


2. Combine the butter, garlic, cheese, parsley, black pepper and salt in a mixing bowl. Mash the ingredients into a paste with the back of a spoon.


3. Preheat a gas grill to the medium-high setting. Add 1 tsp. of the garlic butter mixture to the top of each oyster, and then add a dash of Cajun seasoning.


4. Place the oysters directly onto the grill rack, and cook for two to three minutes or until the garlic butter is bubbling and melted. Remove the oysters from the rack, and allow them to cool.








5. Transfer the oysters onto a large platter. Serve the chargrilled oysters with fresh lemon wedges on the side and sprigs of fresh parsley, if desired.
