Giant pretzels need to rise like other yeast breads, so the process of making soft pretzels takes some time. Instructions

1. Mix the warm water, yeast, salt and sugar in the mixing bowl. Add the flour and stir well to combine all the ingredients.

2. Knead the ingredients by hand for about five minutes.

3. Cover the bowl with a towel and allow it to rise for about one hour.

4. Punch down the dough and separate it into 12 equal pieces.

5. Roll each dough piece into a 15-inch-long rope with your hands.

6. Shape the dough ropes into pretzels. Make the rope into a circle with the ends at the top of the circle. Cross the ends on the inside of the circle, and twist them once. Attach each end to the bottom inside edges of the dough circle to make the standard pretzel shape. Pinch the ends of the dough to attach them securely.

7. Place the pretzels on a greased baking sheet.

8. Mix the baking soda and warm water together and brush the mixture over the pretzels evenly with the pastry brush.

9. Sprinkle the coarse salt evenly over the pretzels.

10. Bake the pretzels at 450 degrees Fahrenheit for about 10 minutes.

11. Remove the pretzels from the oven when they appear golden brown.

12. Cool the pretzels for about two minutes on the baking sheets and then transfer them to wire racks with a spatula to cool them.
