Make Fried Potatoes

Chunky home-fried potatoes are perfect for a family breakfast or brunch, or can be increased to feed a hungry crowd. The onions and green peppers add color and flavor to this old favorite. Serve some fried potatoes with eggs and bacon for a perfectly yummy meal.


Instructions


1. Fill a large pot with salted water and bring it to a boil. Add the potatoes and cook them until they're still firm but tender, approximately 15 minutes.








2. Drain the boiled potatoes thoroughly and cut them into cubes approximately 1/2-inch in diameter.


3. Heat a tablespoonful of extra-virgin olive oil in a large nonstick skillet and add the chopped green pepper and onion. Stir the mixture often and cook it for about 5 minutes, until the onion and pepper are soft. Remove the mixture from the frying pan and set it aside.


4. Pour the remaining olive oil into the skillet and increase the heat to medium high. Cook the cubed potatoes with the paprika, salt and pepper, stirring occasionally for about 10 minutes or until the potatoes are brown.


5. Add the green pepper and onions mixture and cook for 1 more minute.


6. Serve the fried potatoes immediately.
