Make Snow Peas With Sliced Almonds


Crunchy snow peas and lightly toasted sliced almonds are a perfect match and a subtle contrast in textures. Best of all, they take only about 10 minutes to prepare. Serves 4 as a side dish.


Instructions


1. Bring two or three quarts of lightly salted water to a boil.


2. Fill a large bowl half-full with ice and then fill bowl with water to the halfway mark.








3. Place the snow peas in the boiling water until cooked through but still firm to the bite - about 2-3 minutes.


4. Test peas for doneness by removing one with a slotted spoon, dunking it in the ice bath and tasting it.


5. When the peas are done, remove them with a slotted spoon and dunk in ice water bath.


6. Let peas cool completely, then drain and set aside until almonds are toasted.


7. While peas cook, heat the oven to 325 degrees.


8. Spread the almonds in a single layer in a baking pan or a dry, ovenproof skillet - preferably nonstick. Place in the oven.


9. Cook until almonds begin to turn golden around the edges and smell toasted. Check almonds after about five minutes. Don't let them burn.


10. When almonds are done, remove the pan from the oven and carefully add the peas and butter.


11. Place skillet on a burner over low heat and stir constantly until peas are warmed through.
