Bbq Macaroni Salad

BBQ macaroni salad is quick and easy to make.


BBQ macaroni salad is a flavorful variation on traditional macaroni salad that adds spices and barbecue sauce. BBQ macaroni salad is an easy dish to make because it incorporates items you commonly keep in your kitchen and it only takes 15 minutes to mix. You can experiment with the traditional recipe by using different shaped pastas, an assortment of vegetables and exotic, flavored barbecue sauces to make your BBQ macaroni salad unique.


Instructions


1. Fill your pot with 4 qt. of water and bring to a boil. Add 1 tbsp. of salt and the elbow macaroni to the pot. Cook the pasta until it is tender. Cooking time may vary from 5 to 10 minutes depending on the type of pasta. When pasta is tender, pour it into the colander, rinse with cold water, place in a bowl and set aside.


2. Remove the seeds from your red bell pepper. Finely chop the bell pepper and the rib of celery. Chop your scallions into thin slices or mince your onion, if you use onion instead.


3. Stir the chopped peppers, celery, scallions, onion, vinegar, hot sauce, chili powder, garlic powder and cayenne pepper into the pasta and mix well.


4. Add one cup of mayonnaise and ½ cup of barbecue sauce to the pasta and mix well. Use low-fat mayonnaise or plain Greek yogurt instead of real mayonnaise to lower calorie count. You may also experiment with sweet, spicy or garlic barbecue sauces to create a variety of flavors.


5. Let the mixture set for about 5 minutes to thicken. Season with salt and pepper to taste and serve. Cover and refrigerate any leftovers.
