Prep Potatoes to Make Mashed the Next Day


Not too many people think about taking mashed potatoes to an office party, but leftovers aren't likely to be a problem. Mashed potatoes are a comfort food and your co-workers will probably gobble them up. Prepping potatoes ahead of time simplifies mashing them the next morning before work. You can easily transport them in your crockpot.








Instructions


1. Fill the pan half full, cover and place over high heat. Add 1 tsp. salt.


2. Select 12 good quality potatoes. You can use any variety or combination of varieties that you prefer.


3. Peel the potatoes with a vegetable peeler or a paring knife.


4. Quarter each potato.


5. Place in a pan of boiling and salted water.


6. Put the lid on the pan, leaving it slightly ajar so the steam can escape.








7. Allow the potatoes to cook for 15 to 20 minutes or until they are soft.


8. Drain the potatoes and allow to cool slightly. Once cooled, place in the refrigerator.
