Make Roasted Pepper Salad







When you make a roasted pepper salad, you are preparing a delicious salad that is full of nutritional value. There are many variations of roasted pepper salad, but this one can be serve as a salad, a side dish, added to cooked pasta or served as a crostini topping. If you love the taste of peppers, try this roasted pepper salad recipe.








Instructions


Cook the Peppers


1. Preheat your broiler.


2. Slice the peppers in half and remove the stems, ribs and seeds.


3. Place the pepper halves on a roasting pan.


4. Brush the peppers with the olive oil.


5. Season the peppers with Herbs de Provence, salt and pepper.


6. Broil the pepper halves until the skins have charred evenly, making sure to rotate them under your broiler if necessary.


7. Remove the pan from the broiler when the peppers are cooked. The skins will be charred and the pepper will feel soft when pricked with a fork.


Prepare the Cooked Peppers


8. Put the charred peppers into a plastic bag that zips shut.


9. Allow the peppers to cool in the plastic bag.


10. Remove the skin from the cooled pepper halves.


11. Slice the peppers into thin strips and place them into a bowl.


12. Add the feta cheese, fresh thyme and balsamic vinegar.


13. Mix your pepper salad well.
