Prepare Imitation Crab Meat

Imitation crab can be prepared in a variety of ways.








Imitation crab meat (surimi, krab, crab stick, seafood stick, etc.) is made from pulverized white fish that has been reshaped and cured to resemble crab leg meat. Experienced chefs will find that it has a mildly sweet flavor and a pungent aroma. You can use it in nearly any seafood recipe calling for crab, lobster or other shellfish as an alternative. It can also be consumed on its own with a very simple preparation.


Instructions


1. Remove the imitation crab meat from the packaging material and drain on paper towels.


2. Slice a lemon in half and juice into a small bowl. Remove the zest of the lemon using a microplaner or zester and add it to the juice.


3. Crush and finely mince two large garlic cloves. Melt two tbsp. of butter in a skillet or frying pan over medium heat. Add 1 tbsp. olive oil to the melted butter, stir to combine. Saute the garlic in the olive oil and butter until it becomes fragrant.


4. Fry the drained, chopped, imitation crab meat in the skillet for five minutes. Add the lemon juice, lemon zest, and white wine and simmer the mixture for an additional three minutes.


5. Season the crab with 1 tsp. salt and pepper (add more if desired) and stir to combine. Remove the skillet from the heating element and sprinkle 1/2 cup of finely chopped parsley over the top. Serve hot.
