Prevent Potatoes From Sprouting

Store potatoes property to avoid sprouting.


When you prevent sprouting of your potatoes during storage, you extend the vegetable's shelf life. A potato with sprouts indicates the vegetable's starch is turning to sugar. If the potato is not shriveled, it is generally acceptable to eat the potato, after removing the sprouts. If the sprouted potato is shriveled, throw the potato away or add it to your compost pile after cutting it into small pieces.








Instructions


1. Place the potatoes in a container that provides adequate ventilation such as a cardboard box or cloth sack. Do not place the potatoes in a container that holds in moisture such as a plastic storage bin.


2. Place a bundle of dried sage, lavender or rosemary in with the potatoes. According to Ron Smith, horticulturist at North Dakota State University Extension Service, the oils from the herbs inhibit bacterial growth and suppress sprouting.


3. Store the potatoes in a dark storage area with low humidity and sufficient air circulation.


4. Keep the temperature of the storage area around 50 degrees Fahrenheit.


5. Isolate potatoes from fruit such as apples and pears. These types of fruit release ethylene which encourages sprout growth.
