Make Simple Cold Bean Salad

Combine your favorite beans for a cold salad.


A cold bean salad makes a simple, healthy side dish or even a light main dish for dinner. The beauty of this recipe is that it works with any number of different beans and can be easily adjusted to suit your taste or the ingredients in your pantry. Add a balsamic vinegar for a little tang. You can add some chopped green onions or crushed garlic to this salad to give it even more flavor. This salad lasts almost a week in the refrigerator and is actually tastier after sitting in the citrus juice and olive oil for a few hours.


Instructions


1. Drain all the beans from the cans and rinse any that need it. Drain the canned corn as well.


2. Stir all the beans and the corn together in a bowl. Chop some green, yellow or red peppers into bite-size chunks and add them to the beans.








3. Drizzle the salad with olive oil and balsamic or apple vinegar. Squeeze some lime or lemon juice over the top. Add salt and pepper to taste.


4. Serve your cold bean salad as a side dish, a healthy main dish with bread, or on top of a fresh green salad.
