Cheese And Pineapple Gelatin Salad

A gelatin salad combines many different ingredients and textures that are chilled in the refrigerator to create a refreshing treat. Cheese and pineapple gelatin salad consists of ingredients that you would not normally consider eating together, but which make a rich and creamy dessert that you can take to a summer barbecue or enjoy indoors on a rainy day. The dessert pairs well with most dishes.


Instructions


1. Pour the crushed pineapples into a colander to drain the excess juices. Place a bowl under the colander to catch the juice to reserve for later.


2. Pour the pineapple juice into a measuring cup. Add water to the pineapple juice until you have 3/4 cup of liquid.


3. Combine lemon gelatin with boiling water in a bowl. Stir the mixture until the gelatin dissolves.


4. Add the pineapple juice and lemon juice to the gelatin. Stir to mix the ingredients and chill in the refrigerator until it thickens slightly.


5. Add the crushed pineapples and shredded cheddar cheese. Mix into the gelatin and set it off to the side.








6. Beat the heavy whipping cream in a bowl with a hand mixer until it thickens. Combine cream cheese with powdered sugar in a separate bowl until smooth.


7. Combine the cream cheese mixture with whipped cream mixture. Fold the ingredients into the geletin and pour into a mold. Cover the gelatin and chill until it firms, which will take around 2 to 3 hours.
