Make Carne Apache

Carne Apache is a spicy meat and vegetable mixture, similar to the taco. Traditionally, the meat isn't cooked, but is marinated overnight with plenty of lemon juice, which will actually "cook" the meat. However, Carne Apache is perfectly delicious with the lean meat cooked ahead of time. This recipes serves 3 to 4 people.

Instructions

1. Cook the lean ground beef and the minced garlic in a heavy skillet until no pink remains in the ground beef.

2. Spread the cooked ground beef evenly in a shallow baking dish and pour the lemon juice over the top. Stir the mixture with a fork.

3. Leave the Carne Apache in the refrigerator overnight, but mix it occasionally with a fork to blend the flavors.

4. Stir the tomato, onion and minced cilantro into the Carne Apache. Add salt and freshly ground pepper to taste.

5. Serve the Carne Apache on flour tortillas. Garnish the Carne Apache with minced cilantro, if desired. Add a bit of hot sauce before serving, or serve the hot sauce on the side.
