Seafood Slaw Salad

Seafood slaw has a light, creamy dressing.


Slaw, or coleslaw, is a salad that uses shredded cabbage as its primary ingredient. Several variations of slaw exist, including a refreshing seafood coleslaw. Seafood slaw salad utilizes a few basic ingredients combined with a homemade sauce to bind them together. The result is a creamy salad that is tasty on its own, on a sandwich or as a side to pasta or veggies. A basic seafood slaw recipe yields enough for two servings.








Instructions


1. Combine 4 tbsp. small curd cottage cheese, 2 tbsp. ranch salad dressing, 1 tbsp. ground black pepper, 2 tsp. dried parsley, 2 tsp. horseradish sauce and 4 tsp. lime juice in a large bowl. Stir until the sauce is smooth.








2. Add 1/4 cup cooked black beans, 1/8 cup cooked corn, 1 cup drained canned tuna, 1/2 cup shredded carrot and 2 cups shredded cabbage to the sauce and stir until all ingredients are coated evenly.


3. Cover with a sheet of plastic wrap and refrigerate for two hours.


4. Drizzle 1 tbsp. ranch dressing over the top of the chilled salad and toss once more. Serve immediately.
