The heat of hot peppers lies in the seeds.
There is nothing worse than chopping up a pepper and adding it to your dish only to find that it is far too spicy and has made the food inedible. However, proper preparation of the pepper will allow you to tame it to your liking, using the seeds to gauge how hot the dish will be. Taming the pepper can be done as easily as removing the seeds from the pepper. This will allow you to control the heat of the dish without taking a bunch of extra time or effort.
Instructions
1. Place the pepper on a cutting board and put on a pair of latex gloves to protect your hands from the juice of the pepper.
2. Slice the pepper in half length wise using a sharp knife. Use the side of the knife to scrape all the seeds from the pepper. Chop or slice the peppers and use them as planned.
3. Taste the food after adding the pepper to see if you'd like any more heat. Add seeds little by little to add heat, tasting after each time you add more. Remember that the seeds are very powerful and just a few seeds will add a noticeable change to the dish.
