Pita, a Mediterranean flat bread, is known to lose its puff while in storage. When cooked properly, pita puffs up to a deliciously light and wispy pocket that can be used for dipping, grilling and making sandwiches. Steam, which builds from using an extremely hot oven and moist dough, causes the bread to puff. Allowing the steam to escape early in the cooking process leaves the bread flat. Here are some tips and tricks to help keep your pita light and fluffy.

1. Remove your pita from the oven and put it on a cooling rack until it is completely cool. If your pita bread is store bought, remove it from the original bag, which is closed with a twist tie and does not provide a proper air tight environment for storage.
2. Place the pita bread in a freezer bag. Leave a small vent hole in the seal, then push the air completely out of the bag before finishing the seal. Pitas can be stored in your freezer for up to four months in this airtight condition or up to one week in your bread box.
3. To reheat your pita bread, remove it from the bag and let thaw completely. According to epicurious.com, you can wrap the bread in foil and place it in a preheated 350°F oven for 10 to 12 minutes.
