Cook Kingsize Calamari

Cook King-Size Calamari








Calamari is the Italian name for squid. Most restaurant-goers are used to seeing fried calamari rings as appetizers. The body of squid (also referred to as tube) can be cooked several ways other than frying. It also does not have to be cut in rings. Fresh or frozen whole, king-size calamari is available at most supermarkets. Always clean calamari before cooking. Eat it as a main course or place it on top of a fresh green salad. Instructions


1. Clean calamari by pulling the squid tail away from the head so you are left with a tube and tentacles with innards attached. Grasp the head so that the innards (ink sac) come out with it. Pull the cartilage out of the tube. Remove the spotty skin off the calamari tube.








2. Cut the long calamari tubes along the sides to open flat.


3. Rinse the cut calamari under water and dry on paper towels.


4. Mix 2 tbsp. olive oil, 1 tbsp. lemon juice, 1 tsp. oregano, 1 tsp. garlic, a pinch of salt and a pinch of red pepper flakes to make a marinade. Marinade calamari pieces in this mixture for two hours.


5. Cook calamari 30 seconds to 2 minutes on each side, until edges curl up. Use a hot grill or a heated stove pan.
