Mix Eggs With Refried Beans

Make a breakfast burrito with eggs and refried beans


Despite their name, refried beans are only fried once. The popular bean mixture is featured prominently in Southwestern cuisine. Refried beans can be made with pinto or black beans that are fried in oil and then mashed into a thick paste. Some refried bean recipes also incorporate chopped vegetables, such as onions, and shredded cheese. Canned refried beans are available in most supermarkets. Combine the canned beans with eggs and salsa for a quick Tex-Mex style breakfast.


Instructions


1. Heat in a skillet one tablespoon of butter until melted. Cook half a cup of chopped green peppers until softened, about five minutes. Crack open two eggs and add to the pan. Scramble the eggs in the pan, combining with the green peppers, and cook until done, or three to five minutes. Sprinkle on half a teaspoon of cumin and salt and pepper to taste while the eggs cook.


2. Lay out a warmed corn tortilla on each serving plate. Put three-fourths cup of warmed refried beans into a small bowl. Pour egg mixture into the bowl and stir gently to combine.








3. Spoon the egg and bean mixture into the center of each tortilla. Garnish with a spoonful of salsa. Wrap the tortillas closed, tucking in the ends and turning them over so the fold is toward the plate. Serve with slices of avocado (optional).
