The hallmark of a memorable wedding cake is its multitude of moist, tender layers. Professional wedding cake decorators know that the secret to creating a beautiful layered cake is taking care to assemble each layer so that the cake sits correctly on its serving platter.
Instructions
1. Freeze the cake before you assemble the layers. This stabilizes the cake and prevents large layers from cracking. If you can't freeze the cake, you must be sure you've cooled it completely.
2. Place the bottom layer of the wedding cake on a cake turntable. Put a cake board under the bottom layer to ease the transfer of the final product.
3. Level the dome of the bottom layer with a serrated knife, cake-leveling tool or piece of floss. Apply icing to the bottom cake layer with an icing spatula.
4. Pick up the next layer of the wedding cake with the help of a spatula and your hands. Place this next layer onto the cake with the bottom of the cake facing down, just as it was in the pan.
5. Match up the leading edge of the two cake layers on one side. Gently lower the top cake layer onto the lower layer.
6. Rotate the cake turntable and inspect the cake to ensure that the layers are even and no overlap occurs. You can trim any uneven spots with kitchen shears.
