Fry Broccoli







Here's prepare sauteed and fried broccoli.


Instructions


1. For sauteed broccoli, bring 6 cups water to a boil and add one head of broccoli, cut into florets. Make sure they are cut small and uniform. Remove them from the water after 45 seconds and dump into an ice-water bath. Remove from ice water and dry.


2. Heat olive oil in a saute pan over medium-high heat. Add three or four chopped cloves of garlic. After a little less than a minute, add the broccoli and a pinch of salt and pepper. Saute for a minute or two on each side and remove from heat. Serve immediately.


3. For deep-fried broccoli, fill a saucepan half-way up with canola oil and preheat over high heat until a thermometer reads 375 degrees F. Prepare batter using 3 eggs, 3 tbs. flour and 3 tbs. ice water. Beat until just combined.


4. Dredge broccoli florets in batter and gently place in oil once it is up to temp. Fry only four or five at a time, and retrieve them after 3 or 4 minutes (or once they are golden brown). Let them drain on a paper towel, and season immediately with salt.


5. Cool for 5 minutes, then enjoy.
