Instead of baking meatloaf in your oven, cook a meatloaf on a gas barbecue to add additional flavor to your meal. Meatloaf cooked on the barbecue cooks in almost the same amount of time as when baked in an oven. The grill gives the meatloaf a crispier texture, and added wood chips or charcoal briquettes add flavor to the meat. Defrost your ground beef if it is frozen, and cook a meatloaf on your gas barbecue for dinner tonight.
Instructions
1. Preheat the gas grill. Leave the middle burner off to cook the meatloaf over indirect heat. Allow the gas barbecue to heat to a temperature of 350 degrees F.
2. Place 2 lbs. of ground beef in a large mixing bowl. Create a well in the center of the meat.
3. Dice up a medium onion and green pepper. Place these into the well you created in the ground beef.
4. Add the remaining ingredients (Worcestershire sauce, black pepper and salt) to the well.
5. Wash your hands thoroughly before handling the meat loaf. Use your hands to mix all the ingredients into the ground beef.
6. Form the mixture into a loaf 6 to 8 inches long. You can place the meat into aluminum loaf pans, but ensure that you poke several smoke holes in the bottom of these pans to release the liquid buildup.
7. Tear off two large sheets of aluminum foil. Overlap the foil by 2 to 3 inches. Place the meatloaf in the center of the foil. Fold the foil over the meatloaf to create a package. Seal the foil package tightly.
8. Place the meatloaf package in the center of the gas barbecue. This will be on the burner that you turned off earlier.
9. Close the lid to the gas barbecue. Cook the meatloaf for 1 hour. Carefully turn the meatloaf every 10 to 15 minutes to ensure that the it cooks evenly.
10. Open up the foil package during the last 10 minutes. Allow the meatloaf to cook uncovered. You can add any additional seasonings at this time such as salsa or barbecue sauce.
11. Remove the meatloaf from the grill once it has an internal temperature of 155 degrees F. Allow the meatloaf to cool before cutting it into servings.
