The desired thickness of a lemon-butter sauce can vary depending on how and with what it is served. To thicken a lemon butter sauce takes just a few additional steps. Instructions
1. Melt the butter in the saucepan over medium heat.
2. Add the white wine and the lemon juice to the melted butter and stir the ingredients well with the wooden spoon.
3. Simmer the ingredients for about five minutes to blend the flavors and reduce the alcohol from the wine. Simmering will thicken the sauce slightly as the alcohol reduces.
4. Sample the sauce and add salt and white pepper to your taste.
5. Mix the cornstarch with the water to make it smooth.
6. Add the cornstarch mixture to the simmering sauce and stir well.
7. Cook and stir the sauce for about five more minutes until the sauce thickens.
8. Remove the sauce from the heat and use it immediately.
