Recipes For Bariatric Surgery Patients

Iceberg lettuce


According to doctors at the Mayo Clinic, the most common bariatric surgery in the United States is the gastric bypass. This is accomplished by a surgeon stapling the stomach, creating a small pouch, then attaching the small intestine to the pouch. Since the stomach pouch only holds an ounce of food, bariatric patients need to follow a specific diet. Foods rich in lean protein should be eaten at every meal. While foods like candies, fruit juice, soda, and fried foods should be avoided.


Barbecued Mahi Mahi


Ingredients:


1/4 cup pineapple juice








2 Tablespoons fresh lemon juice


4 Mahi Mahi fillets


2 Tablespoons brown sugar


6 teaspoons chili powder


1 teaspoon Essence of Emeril


3/4 teaspoon ground cumin


1/2 teaspoon fresh ground sea salt


½ teaspoon fresh ground black pepper


¼ teaspoon cinnamon


Non-stick spray


Serves 4


Preheat oven to 400 degrees. Combine pineapple juice, lemon juice and mahi mahi in marinating dish. Refrigerate for at least one hour. Remove the mahi mahi from the marinade and discard the marinade.


In a small bowl combine the other ingredients, and mix well. Rub both sides of the fish with the seasoning. Spray a casserole dish with non-stick spray, and place the fish into the dish. Bake for 15 to 20 minutes or until done. The fish should be flakey when cut with a fork.


Chicken Salad


Ingredients:


2 (6-ounce) cans of white albacore tuna


1 tablespoon sweet pickle relish


1 teaspoon onion powder


2 tablespoons minced garlic


½ cup of low fat mayonnaise, or mayonnaise with olive oil


½ apple, cored and diced small


½ teaspoon fresh ground sea salt


2 teaspoon fresh ground black pepper


Saltine crackers, optional


Serves 4


Open the tuna and drain the water from the can. In a medium sized bowl add all the ingredients. Mix well. Serve with saltine crackers, if desired.


Granny's Jell-o Salad








Ingredients:


2 boxes raspberry or strawberry sugar-free jell-o


1 package light Cool Whip


1 large container of low fat cottage cheese


Serves 10


Cook the jell-o according to the package directions. Pour the jell-o mixture into a large bowl, and refrigerate for 30 minutes, or until starting to set. Remove the jell-o from the refrigerator, and add the cool whip and cottage cheese. Return the salad to the refrigerator and allow to cool for about one hour.


Lettuce Wraps


1 pound ground round


1 head of iceberg lettuce


1 small onion, diced


1 tablespoon minced garlic


1/4 cup soy sauce


½ cup teriyaki sauce


In a heated skilled brown the ground round, onions and garlic. Add the soy sauce and teriyaki sauce to the browned beef. Cook until the soy sauce and teriyaki sauce has mostly evaporated. Serve the meat wrapped inside the lettuce leaves.
