Roast Baby Potatoes

Baby potatoes range in size.


Baby potatoes are harvested from the ground early, before they have reached their full size. As a result, the potato's flavors are condensed, resulting in a richer tasting dish. Baby potatoes are exceptionally tender when roasted at a high temperature in the oven. Serve roasted baby potatoes alongside a meat or vegetable main dish to complete a meal, or have them as a snack on their own. To roast baby potatoes, you will need an hour and 10 minutes. The recipe yields six servings.


Instructions


1. Preheat an oven to 425 degrees Fahrenheit.








2. Place 1 lb. small, skinned red potatoes into a large mixing bowl and set aside.


3. Combine 2 tbsp. Italian herb mixture, 3 tbsp. minced garlic, 1 tbsp. salt, 3 tbsp. ground black pepper and 1/3 cup olive oil in a small mixing bowl. Whisk until the seasoning mixture is evenly combined.


4. Pour the seasoning mixture over the potatoes and toss to coat them evenly.


5. Place the coated potatoes 1/2-inch apart in a baking dish. Bake the potatoes for 30 minutes. Use a pair of tongs to turn each potato over and bake for an additional 30 minutes.








6. Allow the potatoes to cool for 5 minutes before serving.
