Hull Cowpeas

Enjoy a new taste treat with fresh-hulled cowpeas, rather than dried ones.


Cowpeas, also know as purple hull or black-eyed peas, are a key ingredient in southern dishes, including Hoppin' John. Cowpeas contain 23 percent protein, with an amino acid composition that supplements grains for a balanced vegetarian protein. They are often cooked with salt port and onions, and the legumes are said to bring you good luck when you eat them on New Year's Day.


Instructions


1. Fill the bowl with unshelled peas.


2. Spread several layers of newspaper on your lap. Settle the bowl between your knees.








3. Snap the pointed ends off the pods, using one to pull the natural string down the side of the shell.


4. Hold the pod over the bowl. Slide your thumbnail down the seam of the pod to split it. Let the peas inside fall into the bowl.


5. Drop the empty pod onto the newspaper in your lap. Alternately, drop them into a paper bag beside your chair.


6. Snap flat pods with undeveloped peas into 1-inch pieces and drop them into the bowl.


7. Repeat until you have hulled all of the peas.


8. Add the empty pods to your compost bin.
