Marinade Duck With Peppercorns

Use peppercorns to make a delicious marinated duck.


Marinated duck is a delicious main course dish for an everyday dinner or a special occasion. By marinating the duck before you cook it, you infuse the meat with flavor and you don't need to use as many ingredients as you would with a spice rub. Peppercorns come in white, green or black, and vary in heat. You will want to purchase whole peppercorns and crush them just before adding to the marinade to impart the most flavor.


Instructions


1. Rinse the duck and use the paper towels to pat it dry.


2. Use a knife to pierce the duck all over. This lets the fat drain out of the duck when it cooks so that you get a crisp duck skin.


3. Use the side of the knife to crush the peppercorns (you need 1-2 tbsp. of whole peppercorns).








4. Mix the peppercorns with 1 cup rice wine in the bowl.


5. Add the duck to the bowl and cover with foil.


6. Refrigerate and marinate 4 to 6 hours.


7. Remove from the marinade and cook according to your recipe.
