Make Roasted Potatoes On The Grill

Red potatoes cook well on the grill.


As long as you're firing up the grill, you might as well take full advantage of the possibilities. Don't limit yourself to just meat -- leave room to cook a delicious side dish at the same time. These roasted potatoes need almost an hour on the grill. Adjust the seasonings to suit your taste; try some fresh chopped herbs, too. One trick for even more flavor is to pour a few ounces of beer over the potatoes before roasting them.


Instructions


1. Spray a piece of aluminum foil with cooking spray.








2. Dice about 2 potatoes per person and cut the onion into medium chunks.


3. Mix the potatoes and onions in a bowl and add salt and pepper to taste. Sprinkle in a garlic seasoning or fresh minced garlic and any other herbs or seasonings to add flavor.


4. Spoon the potatoes onto the foil and curl up the sides to form a bowl. Add 4 to 5 tablespoons of butter.


5. Spray another piece of foil to cover the bowl and then crimp the edges together to seal the packet.


6. Place the packet on the grill at medium heat. Allow them to roast about 45 minutes before cooking the meat. When the potatoes are soft, take the foil pack off the grill, sprinkle in some cheese and then place the potatoes in the oven to keep warm.
