For a fast and easy main course, try making grilled scallops with lemon-garlic butter. The scallops only need a few minutes to cook, and the butter is made with only a few ingredients. This delicious seafood dish won't take you longer than 10 minutes to prepare.
Instructions
Make the Lemon-Garlic Butter
1. Put the wine, vinegar and garlic in a small sauce pot over high heat. Bring the mixture to a boil. Let it boil, uncovered, for approximately four minutes, until it reduces to about 1/4 cup of liquid.
2. Turn down the heat to low. Add one piece of the butter, and whisk it into the liquid mixture. Add the remaining pieces of butter, one at a time, whisking as you add each piece.
3. Remove the pot from the heat. Add the lemon juice, and then stir your lemon-garlic butter.
4. Season the lemon-garlic butter with salt and pepper, a little at a time. Taste the butter, and add more salt and pepper if you would like. Cover the pot with a lid to keep it warm.
Grill the Scallops
5. Clean the grill to ensure that the scallops don't stick when you cook them. If there is hardened, dried food stuck on the grates, your scallops could fall apart when you try to flip them. Heat your grill to medium-high heat.
6. Pat each of the scallops with a towel until they are all dry. Lay them out on a tray. Pour a dime-sized amount of olive oil on each scallop. Spread the oil on each scallop until all the sides are coated.
7. Season the scallops with salt, pepper and lemon pepper seasoning. Be sure to sprinkle the seasonings on all sides of the scallops. Refrigerate the scallops until your are ready to grill them.
8. Spread olive oil on the grill to prevent the scallops from sticking. Grill the scallops for about two to three minutes on each side.
9. Pour the lemon-garlic butter over the scallops, and serve the dish immediately.
