Correct Overseasoned Stuffing

Correct overseasoned stuffing by balancing the flavors.


A heavy hand with spices in a stuffing recipe should not thwart your cooking efforts. Save the stuffing by balancing out the excessive seasonings or using temperature to change how the eater perceives the flavor of the stuffing. For future reference, it is easier to add seasoning to a bland stuffing than it is to correct an overseasoned stuffing.


Instructions


1. Use the stuffing as it is in cold stuffed peppers, since the cold temperature will mute the excess seasoning.


2. Mix in an additional cup of bread cubes and another 1/2 cup unsalted chicken stock to thin out the stuffing. Taste the stuffing after adding the bread and stock and add more if needed until the flavor tastes balanced.


3. Add 3/4 cup of diced dried fruits per four cups of stuffing to balance out the seasoning with the concentrated sugar in the fruit. This also adds bulk to the stuffing.


4. Place the corrected stuffing into a baking pan and pour 1/2 cup of gravy or unsalted chicken stock over the top.








5. Bake at 350 degrees Fahrenheit for 20 to 30 minutes or until hot throughout.








6. Taste the stuffing before serving. Top the stuffing with gravy if the flavor of too many additional herbs and spices is still too strong.
