With a few new harvest meal ideas, you can step away from your normal steamed vegetables and baked fruit, and bite into a scrumptious harvest meal.
Squash
Saute three medium-sized zucchini and three medium-sized yellow squash in butter. Add garlic powder, black pepper, salt and smoked sausage. Serve with corn bread.
Pumpkin
Mix 2 cups of pumpkin puree with 1/2 tsp. of cinnamon, 1 tsp. teaspoon of vanilla and 2 tbsp. of brown sugar. Add instant pancake mix. Pour onto a hot, greased griddle, flipping when the top is full of holes. Serve with eggs, bacon and potatoes.
Apples
Unwrap and melt a bag of caramel candies. Wash several apples, shove candy sticks in the bottom of them and roll the apples in the caramel while holding the stick. After the apples are coated, place them onto a wax-lined cookie sheet to cool stick side pointed up. Serve with turkey, cheddar and apple sandwiches.
Carrots
Melt 2 tbsp. of butter in a saucepan before adding 1/4 cup of maple syrup, 1 tsp. of salt, 1/2 tsp. of cinnamon and 1 1/2 lbs. of peeled baby carrots. Cook until tender. Serve with roast beef, mashed potatoes and gravy.
